Easy Sheet Pan Pancakes

Weekdays around here are for easy breakfasts like granola, berry overnight oats, and banana oatmeal cookies. But every Saturday morning, my kids beg me to make pancakes which they cover with loads of peanut butter and syrup. Oh to be a kid! It’s such a fun tradition that I love to do but it can be a little time-consuming to fry up each pancake.

That’s why these Sheet Pan Pancakes from Pancake Mix have become my absolute favorite way to make pancakes. They’re so incredibly easy! Just mix the batter, pour into a sheet pan, and bake. In 15 minutes, you’ll have delicious pancakes to feed a crowd or a handful of hungry kids! Make it unique with all types of toppings like berries, chocolate chips, or sprinkles. And if there are any leftovers, freeze them to enjoy later!

Ingredients

  • Pancake Mix– Any brand of pancake mix will work for this recipe. I’ve tried name brands and store brands with similar results.
  • Milk– Swapping out the water for milk makes them taste a little richer but water can easily be used instead.
  • Eggs– Adding a couple of eggs helps make the pancakes extra fluffy.
  • Butter– Just a little butter coats the bottom of the pan to prevent the pancakes from sticking. Plus a little butter adds a nice taste.

How To Make Sheet Pan Pancakes

  1. Mix the batter: In a large bowl, stir together pancake mix, eggs, and milk just until combined. Try not to overmix or it will make them a little chewy.
  2. Pour into the pan: Turn the oven to 425 degrees Fahrenheit. The easiest way to melt the butter is to add it to the pan and place it in the oven while preheating. Remove it once melted and brush over the entire bottom until everything is covered. Pour the batter evenly into the pan. Add any toppings.
  3. Bake: Place the pan in the oven and bake for 15-17 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean. Serve with warm maple syrup, berries, or whipped cream, and enjoy!

To store: Store any leftovers in an air-tight container or freezer bag in the refrigerator for up to 5 days.

To freeze: Allow to fully cool and place in an air-tight container or freezer bag and freeze for up to 2 months. Microwave for 45-60 seconds to serve.

Frequently Asked Questions

What are my pancakes chewy?

Overmixing is often the cause of chewiness. Mix the wet and dry ingredients until just combined. There will still be little bubbles throughout the batter and should not be completely smooth.

Is it ok if pancakes are a little doughy?

No, they should be completely dry in the center. Place a toothpick into the center and if it comes out clean, it is fully cooked.

Helpful Tips

Ingredients
  

  • 3 cups pancake mix
  • 2 cups milk
  • 2 large eggs
  • 2 tablespoons butter

Toppings

  • 1 cup of any toppings such as berries or chocolate chips

Instructions
 

  • Preheat oven to 425 degrees Fahrenheit. While preheating, add butter to a sheet pan and place in the oven to melt. Remove from the oven once melted. Spread evenly over the bottom of the pan and set aside.
  • In a large bowl, stir together pancake mix, milk, and eggs until just combined. There should be a few small bubbles and slightly lumpy.
  • Pour the batter evenly into the sheet pan. Top with any toppings.
  • Bake for 15-17 minutes until golden brown and a toothpick inserted into the center comes out clean.
  • Remove from oven and allow to cool for 5 minutes and then slice. Serve with any toppings such as maple syrup, berries, or whipped cream. Enjoy!
