Ingredients

  • 1/2 sweet onion thinly sliced
  • 3/4 cup sour cream
  • 2 tablespoons white vinegar
  • 1-2 teaspoons white sugar
  • 1/2 teaspoon dried dill weed
  • salt to taste

Instructions

  • In a medium bowl, whisk together sour cream, vinegar, sugar, dill, and salt.
  • Add in cucumbers and onions and stir until everything is well coated. Serve immediately for crispy cucumbers or refrigerate for 2-3 hours to allow cucumbers to soften. Enjoy!

Notes

** Once cut, cucumbers will start to lose water, making the dressing thinner. For a thicker dressing- cut cucumbers, place in a colander, and sprinkle with 1/2 teaspoon of salt. Allow cucumbers to sit for 30 minutes to drain excess water. Then continue with step 2.

    I just made this and I am not a cucumber eater. But I love this so I be making it again but this it will have bacon bits added.

  4. Pretty good and better the second day for me. My mom always made it less thick by adding milk. I might try that next time and just a little more vinegar and for me 1 teaspoon of sugar is plenty. Note the dressing does thin as it sits so if you like it thick eat it the first day.

    I needed to double the vinegar to make more like my family’s danish recipe. I couldn’t really taste it in this one. Everything else was very good. We also always soaked the cucumbers in water with some salt to draw out the liquid so the salad isn’t too runny. After 20 minutes rinse and squeeze the cucumbers to get as much water out as possible. Always let it sit a few hours before serving.
