Easy Fritos Corn Salad
Growing up in the Midwest, we had salads at every family reunion, party, and church potluck. We mixed anything with mayo and called it a salad- ha! My favorites were Caesar Pasta Salad and Cherry Fluff Salad. That was until I had this creamy and crunchy Fritos Corn Salad. It’s so delicious with sweet corn, peppers, and Mexican cheese covered in a flavorful creamy mayonnaise sour cream dressing and then topped off with crispy Chili Cheese Fritos chips. This salad is such an easy classic side dish that tastes so good with any main meal and of course, is a potluck staple.
Why You Will Love This Recipe
Flavorful– Sweet creamy corn with crunchy chili cheese chips.
Make Ahead– Easy to stir together and enjoy later.
Easy– Made in only a few minutes with just a few simple ingredients.
Ingredients
- Chili Cheese Fritos– These chips give the best flavor and crunchiness to the salad. You could also use plain Fritos if you wanted a different taste.
- Corn– I use canned corn because I like the little extra saltiness but frozen or even fresh off the cob would taste yummy.
- Red Pepper– This gives it a little crunch and a delicious flavor. Yellow, orange, or green pepper would also be good to use to switch it up.
- Lime– A splash of lime gives a little zippy fresh flavor.
- Sour Cream and Mayo– This is the base of the dressing that makes it so creamy. Swap out Plain Yogurt for Sour Cream if you prefer.
- Mexican Shredded Cheese– The cheese helps bring all the flavors together. You could substitute with Cheddar or Colby.
- Cilantro– Optional but gives a little extra burst of flavor.
- Salt and Pepper

Make Ahead and Storage Options
To make ahead: This salad is such a good side dish to make in advance and eat when you’re ready. I recommend making it the day you will serve the dish for the best results and only top with the Fritos right before serving. After a few hours, the chips tend to become soft.
To store: Store any leftovers in an air-tight container in the refrigerator for up to 5 days.
Frequently Asked Questions
The FDA recommends only allowing a mayo-based salad to sit at room temperature for up to 2 hours.
