This really is a throw-together meal with ingredients you probably have around the house, like ground turkey, corn, beans, and rice. And don’t forget the cheese! A perfect meal for everyone to enjoy on a busy weeknight.

Ingredients
- Ground Turkey- You can easily swap this for ground beef or chicken if you prefer.
- Taco Seasoning– I often use pre-made to save time, but you can easily use homemade too.
- Corn, Beans, and Onion– This is such a delicious combination. I have also used pinto beans when I had those on hand.
- Rotel– Use mild or medium depending on how spicy you want it to taste.
- Minute Rice– I love using this rice because it really cuts down the cooking time.
- Chicken Broth– You can also use water, but I think the broth adds a nice extra savoriness to the dish.
- Cheddar or Mexican Cheese– Add more or less depending on how much cheese you enjoy.

Step-by-Step Instructions
- Brown: Add the ground turkey and chopped onion to the pan with a little oil or cooking spray. Cook for around 5 minutes to get the turkey to brown.
- Cook: Add the rest of the ingredients except the cheese and stir it all together. Then, cover it with a lid and let it cook until the rice gets softer. It usually takes around 5-7 minutes. Be sure to stir a few times to prevent the rice from sticking to the bottom of the pan.
- Serve: Sprinkle the cheese on the top and cover again for a few minutes until the cheese gets all melty. And that’s it! Enjoy!

Ingredients
- 1 pound ground turkey
- 1/2 small onion chopped
- 1 (15 ounce) can corn drained
- 1 (15 ounce) can black beans drained and rinsed
- 1 (10 ounce) can Rotel do not drain
- 1 ounce packet taco seasoning or 3 tablespoons homemade
- 1 cup Minute Rice
- 1 cup chicken broth or water
- 2 cups Cheddar or Mexican Cheese shredded
- salt to taste

Instructions
- Add one tablespoon of oil or cooking spray to the bottom of a large skillet over medium heat. Add ground turkey and onions and cook until browned.
- Stir in the rest of the ingredients except the cheese and bring to a boil. Cover with a lid and cook on low heat until rice is tender- around 5-7 minutes. Stir a few times to prevent the rice from sticking to the bottom of the pan.
- Sprinkle the cheese over the top of the dish, then cover and allow the cheese to melt- around 3-5 minutes. Serve and enjoy!
Notes
- Refrigerate leftovers in an air-tight container for up to 5 days or freeze for up to 2 months.
- Do not overcook the rice or it will become soft and mushy.
- If using long-grain rice, increase cook time by around 20 minutes.
