Ingredients

  • 1 pound ground turkey
  • 1/2 small onion chopped
  • 1 (15 ounce) can corn drained
  • 1 (15 ounce) can black beans drained and rinsed
  • 1 (10 ounce) can Rotel do not drain
  • 1 ounce packet taco seasoning or 3 tablespoons homemade
  • 1 cup Minute Rice
  • 1 cup chicken broth or water
  • 2 cups Cheddar or Mexican Cheese shredded
  • salt to taste

Topping Ideas

  • avocado
  • cilantro
  • sour cream
  • tortilla chips

Instructions

  • Add one tablespoon of oil or cooking spray to the bottom of a large skillet over medium heat. Add ground turkey and onions and cook until browned.
  • Stir in the rest of the ingredients except the cheese and bring to a boil. Cover with a lid and cook on low heat until rice is tender- around 5-7 minutes. Stir a few times to prevent the rice from sticking to the bottom of the pan.
  • Sprinkle the cheese over the top of the dish, then cover and allow the cheese to melt- around 3-5 minutes. Serve and enjoy!

Notes

Storage:
  • Refrigerate leftovers in an air-tight container for up to 5 days or freeze for up to 2 months.
Helpful Tips:
  • Do not overcook the rice or it will become soft and mushy.
  • If using long-grain rice, increase cook time by around 20 minutes.
  • Ground beef can easily be used instead of ground chicken.
