Jalapeño Peach Chicken Bites
This Jalapeño Peach Chicken Bites recipe is bursting with bold flavors with a spicy jalapeño sweet peach sauce covering every tender juicy piece of chicken. It is an easy one-pan weeknight meal ready to enjoy in just 20 minutes.

Sweet and Spicy One-Pan Dish
One-pan dishes are some of my favorite dinners for busy weeknights. They make meal planning so much easier when I don’t have to dirty multiple dishes.
I am in love with these Jalapeño Peach Chicken Bites! I had this idea to combine one of my favorite fruits and pair it with a little spicy jalapeño for a delicious sauce to marinate over chicken. The combination tastes fantastic! It is sweet, spicy, and so flavorful. And it only takes a few minutes of prep time and they’re ready to cook and eat in less than 30 minutes! These delicious chicken bites taste so good on their own or can be served over rice for a hearty weeknight dinner.

Ingredients
- Boneless Skinless Chicken Breasts– 2 chicken breasts or around 1-1/2 pounds are needed for this recipe. Chicken thighs can also be used if you prefer dark meat. Keep in mind that the sauce will be a little thinner since thighs tend to release more juices.
- Peach Jam or Preserves– This can be a homemade jam or store-bought version. Just use whatever you enjoy the most.
- Apple Cider Vinegar– A little vinegar helps to balance out the sweetness from the jam.
- Soy Sauce– The saltiness from the soy sauce helps to bring all the flavors together.
- Garlic, Paprika, Oregano, Salt and Pepper– This combination of spices makes the best seasoning for the chicken. Add more or less to your tastes.
- Chicken Bouillon Granules– This is optional but I do recommend adding if not using chicken thighs to help bring out the savoriness of the chicken.

How To Make Jalapeño Chicken
- Cut the Chicken: Slice the chicken into around 1-inch cubes. It doesn’t have to be exact but fairly close in size to help the chicken cook more evenly.
- Mix the Seasoning: Stir together paprika, garlic powder, salt, chicken bouillon granules, oregano, and pepper together in a small bowl.
- Make the Sauce: Stir together peach jam, apple cider vinegar, soy sauce, and minced garlic in a medium bowl.
- Add ingredients to the Pan: Add the chicken to the bottom of a 9×13-inch pan. Sprinkle the seasoning mix over the top of the chicken and stir to coat. Then pour the sauce over the top of the chicken. No need to worry if it is not evenly coated since the sauce will thin and cover the bottom of the pan when cooking.
- Top with Peaches and Jalapeños: Slice peaches and jalapeños and place them over the top of the chicken.
- Cook: Place in the oven and cook for around 15-20 minutes or until the chicken reaches 165 degrees Fahrenheit. Serve and enjoy!
Storage Options
To store: Store any leftovers in an air-tight container in the refrigerator for up to 3 days.
To freeze: Allow to fully cool and place in an air-tight container and freeze for up to 2 months.
Helpful Tips
* Since the chicken is covered in sauce, a meat thermometer is helpful to determine when the chicken has finished cooking.
* Bulk this meal up by serving over rice or add vegetables like broccoli or cauliflower.
* Make it spicier by adding more jalapeño slices on top.

Ingredients
- 1 1/2 pounds boneless skinless chicken breasts around 2 breasts
- 2 peaches
- 1-2 jalapeños
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon chicken bouillon granules optional
- 1/2 teaspoon oregano
- 1/2 teaspoon pepper
Peach Sauce
- 1 cup peach jam or preserves
- 1 tablespoon apple cider vinegar
- 1 teaspoon soy sauce
- 1/2 teaspoon minced garlic
Instructions
- Preheat the oven to 420 degrees Fahrenheit.
- Dice chicken into 1-inch size cubes. Place chicken evenly over the bottom of a 9×13-inch pan.
- Mix paprika, garlic powder, chicken bouillon granules, salt, oregano, and pepper in a small bowl. Sprinkle evenly over the chicken to coat.
- Stir together peach jam, minced garlic, apple cider vinegar, and soy sauce in a medium bowl and pour over the top of the chicken.
- Cut the peaches and jalapeños into slices and place evenly over the top of the chicken.
- Bake for 15-20 minutes or until the chicken has reached an internal temperature of 165 degrees Fahrenheit. Allow to cool for 5 minutes before serving. Enjoy!
