Ingredients

  • 1/2 cup butter softened
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup bananas mashed
  • 1/2 cup sour cream
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 350 degrees Fahrenheit. Grease or line with parchment paper a 9x5 loaf pan.
  • In a large bowl, cream butter and sugar. Stir in eggs, vanilla, and mashed bananas. Fold in sour cream. Add flour, baking soda, baking powder, salt, and cinnamon and stir until just combined. Pour into pan.
  • Bake for 40-55 minutes, or until center is set and toothpick inserted in center comes out clean.
  • Allow to cool in pan and then transfer bread to a wire rack to completely cool. Slice and enjoy!

1 cup of mashed bananas tends to be 3 small or 2 large whole bananas. Do not use more than 3 or the bread will be too dense.
Check the pan about 10 minutes before the baking time is up. If the top appears to be browning too quickly, move the pan lower one rack in the oven.
