Ingredients

  • 2 (15 ounce cans) corn drained
  • 1 red pepper diced
  • 2 cups Mexican Shredded Cheese
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 lime juiced
  • salt to taste
  • 9.25 ounce bag Chili Cheese Fritos coarsely crushed
  • cilantro optional for topping

Instructions

  • Mix together corn, red pepper, cheese, mayonnaise, sour cream, lime juice, and salt in a large bowl. Cover and refrigerate until ready to serve.
  • Just before serving, stir in the crushed Chili Cheese Fritos. Top with cilantro if desired. Enjoy!

Notes

Storage: Store any leftovers in an air-tight container in the refrigerator for up to 5 days. 
Helpful tip: Add the chips right before stirring. Once mixed, the chips tend to become soft within a few hours.
