Ingredients

  • 8 ounces Burrata cheese 1-2 balls
  • 12 ounces cherry or grape tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • fresh basil optional

Instructions

  • Remove Burrata cheese from the refrigerator and allow it to come to room temperature.
  • Whisk olive oil, balsamic vinegar, minced garlic, Italian seasoning, and salt together in a medium bowl. Stir in tomatoes. Set aside and allow to marinate while the oven preheats.
  • Preheat the oven to 400 degrees Fahrenheit.
  • Place the tomatoes with the marinade in a small baking dish or pie pan. Roast for 15-20 until the tomatoes soften and the juices overflow.
  • Remove from oven and allow to cool for 5 minutes before adding the Burrata cheese. Slice the cheese and garnish with fresh basil before serving with crostini, bread, or crackers. Enjoy!

Notes

Helpful Tips:
  • The tomatoes can be marinated up to 24 hours in advance in the refrigerator to help enhance the flavors.
  • The Burrata will be extra creamy if served at room temperature.
