Preheat the oven to 420 degrees Fahrenheit.
Dice chicken into 1-inch size cubes. Place chicken evenly over the bottom of a 9x13-inch pan.
Mix paprika, garlic powder, chicken bouillon granules, salt, oregano, and pepper in a small bowl. Sprinkle evenly over the chicken to coat.
Stir together peach jam, minced garlic, apple cider vinegar, and soy sauce in a medium bowl and pour over the top of the chicken.
Cut the peaches and jalapeños into slices and place evenly over the top of the chicken.
Bake for 15-20 minutes or until the chicken has reached an internal temperature of 165 degrees Fahrenheit. Allow to cool for 5 minutes before serving. Enjoy!
