Jalapeño Peach Chicken Bites

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts around 2 breasts
  • 2 peaches
  • 1-2 jalapeños
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon chicken bouillon granules optional
  • 1/2 teaspoon oregano
  • 1/2 teaspoon pepper

Peach Sauce

  • 1 cup peach jam or preserves
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon soy sauce
  • 1/2 teaspoon minced garlic

Instructions

  • Preheat the oven to 420 degrees Fahrenheit.
  • Dice chicken into 1-inch size cubes. Place chicken evenly over the bottom of a 9x13-inch pan.
  • Mix paprika, garlic powder, chicken bouillon granules, salt, oregano, and pepper in a small bowl. Sprinkle evenly over the chicken to coat.
  • Stir together peach jam, minced garlic, apple cider vinegar, and soy sauce in a medium bowl and pour over the top of the chicken.
  • Cut the peaches and jalapeños into slices and place evenly over the top of the chicken.
  • Bake for 15-20 minutes or until the chicken has reached an internal temperature of 165 degrees Fahrenheit. Allow to cool for 5 minutes before serving. Enjoy!

Notes

Store leftovers in the refrigerator for up to 2 days. 
Add more or less jalapeños depending on how spicy you prefer.
