Ingredients: – 2 (15 ounce cans) corn drained – 1 red pepper diced – 2 cups Mexican Shredded Cheese – 1/2 cup mayonnaise – 1/2 cup sour cream – 1/2 lime juiced – salt to taste – 9.25 ounce bag Chili Cheese Fritos coarsely crushed – cilantro optional for topping

Directions: Mix together corn, red pepper, cheese, mayonnaise, sour cream, lime juice, and salt in a large bowl. Cover and refrigerate until ready to serve.

- Just before serving, stir in the crushed Chili Cheese Fritos. Top with cilantro if desired.
