Easy Homemade Coconut Almond Granola

Ingredients
  

  • 3 cups old fashioned rolled oats
  • 1 cup unsweetened shredded coconut
  • 1 cup sliced almonds
  • 1/4 cup coconut oil
  • 1/3 cup brown sugar
  • 1/3 cup honey
  • 1/2 teaspoon coconut extract
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions
 

  • Preheat the oven to 300 degrees Fahrenheit. Line a large baking sheet with parchment paper and set aside.
  • In a large bowl, stir together oats, coconut, almonds, salt, and cinnamon together and set aside.
  • In a small bowl, melt the coconut oil, brown sugar, and honey together in the microwave for about 1 1/2 minutes or until the coconut oil is melted and warm. (You could also do this on the stove over medium heat). Stir in coconut and almond extracts. Pour over the dry ingredients and stir until everything is well coated.
  • Spread the granola evenly over the parchment paper-lined baking sheet. Bake for 30 minutes total, removing every 10 minutes to stir, and then return to continue baking. This is really important so that the granola doesn't burn. Once it's finished baking, it will be golden brown. Remove from oven and allow to cool (it will harden as it cools). Enjoy!

Notes

- This granola can be stored at room temperature for 3 weeks or freeze it for up to 3 months in an air-tight container.
