Ingredients
  

  • 2 cups old fashioned oats
  • 1 1/2 cups milk or nut milk
  • 1/3 cup pure maple syrup or brown sugar
  • 2 tablespoons melted butter or coconut oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups mixed berries fresh or frozen

Instructions
 

  • Preheat oven to 350 degrees. Lightly grease a 9x9 or 11x7 inch baking pan and set aside.
  • In a large bowl, mix together oats, milk, maple syrup, butter, egg, vanilla extract, baking powder, ground cinnamon, and salt until combined. Gently stir in 1 cup of mixed berries. Pour into prepared baking dish. Top with remaining berries.
  • Bake for 30-40 minutes or until the center is set. Remove from oven and allow to cool for 5 minutes before serving. Best served warm with maple syrup, in a bowl with milk, or enjoyed by itself.

Notes

Tips and tricks:
  • Store it in an air-tight container in the refrigerator for up to 5 days to prevent it from drying out. Reheat in the microwave or the oven.
  • Easily swap out the berries with your favorite fruit!
  • If you double the recipe, bake it in a 9x13 inch pan.
