This Easy Mixed Berry Baked Oatmeal recipe is a delicious and easy breakfast filled with fresh or frozen strawberries, raspberries, and blueberries, and sweet maple syrup. Quick and easy for a weekday breakfast or weekend brunch.
Preheat oven to 350 degrees. Lightly grease a 9x9 or 11x7 inch baking pan and set aside.
In a large bowl, mix together oats, milk, maple syrup, butter, egg, vanilla extract, baking powder, ground cinnamon, and salt until combined. Gently stir in 1 cup of mixed berries. Pour into prepared baking dish. Top with remaining berries.
Bake for 30-40 minutes or until the center is set. Remove from oven and allow to cool for 5 minutes before serving. Best served warm with maple syrup, in a bowl with milk, or enjoyed by itself.
