Cinnamon French Toast Sticks are the best finger food breakfast the whole family will enjoy. Nothing tastes better than Texas Toast-sized pieces of bread dipped in an egg mixture, deep-fried, then rolled around in cinnamon-sugar goodness. Top it off with warm maple syrup or berries and whipped cream and you'll realize why you can't eat just one!
Mix together sugar and cinnamon in a large plate and set aside. In a large bowl, whisk eggs, milk and vanilla extract until combined and set aside.
Cut each slice of Texas Toast into 3 equal sticks. (Optional: cut off the crusts of each stick). Dip each piece in the egg mixture until well coated. Shake off any excess.
In a large skillet over medium heat, melt 1-2 tbsp butter. Once melted, add bread sticks to the pan in a single layer without over-crowding the pan. Cook until golden brown on each side, about 3-5 minutes.
Immediately upon removing from the pan, dip the stick in the cinnamon sugar mixture until well coated. Serve warm with syrup or berries and whipped cream.
