Granola Recipe

This Easy Homemade Coconut Almond Granola recipe is full of flavor and aroma with sweet coconut, crunchy almonds, and baked with honey. A delicious breakfast with milk, fruit, yogurt, or to enjoy as a snack!

Easy to make ahead for special occasions, potlucks, Mother's Day, Thanksgiving, or any holiday brunch! Freezer friendly too!

Ingredients: – 3 cups old fashioned rolled oats – 1 cup unsweetened shredded coconut – 1 cup sliced almonds – 1/4 cup coconut oil – 1/3 cup brown sugar – 1/3 cup honey – 1/2 teaspoon coconut extract – 1/4 teaspoon almond extract – 1/2 teaspoon ground cinnamon – 1/2 teaspoon salt

Directions: – Preheat the oven to 300 degrees Fahrenheit. Line a large baking sheet with parchment paper and set aside. – In a large bowl, stir together oats, coconut, almonds, salt, and cinnamon together and set aside.

– In a small bowl, melt the coconut oil, brown sugar, and honey together in the microwave for about 1 1/2 minutes or until the coconut oil is melted and warm. Stir in coconut and almond extracts.

–Pour the honey mixture over the dry ingredients and stir until everything is well coated.

–Spread the granola evenly over baking sheet. Bake for 30 minutes, removing every 10 minutes to stir, and return to continue baking. Once it's finished baking, it will be golden brown. Remove from oven and allow to cool (it will harden as it cools).
