This Brown Sugar Honey Glazed Carrots recipe is a staple in all of our holiday meals, especially Easter. The taste is so delicious that they compliment any main dish easily. Plus the combination of butter, brown sugar, and honey forms this amazingly sweet glaze that almost tastes like you’re eating dessert. It’s fantastic and even our picky eaters enjoy this recipe!

HOW TO MAKE IT

This recipe is quite easy to make. All you have to do is:

BOIL– water in a medium size saucepan.

ADDcarrots and boil for about 5 minutes. Carrots should start to soften but still have a bit of crunch to them.

DRAIN– water and return carrots to the pan.

ADDbutter, brown sugar, honey, cinnamon, and salt. Cook on medium-low heat for about 5-7 minutes. The carrots should be mostly soft with just a slight crunch to them. The sauce will also turn more into a glaze. If you want a thicker glaze, add 1-2 tsp cornstarch to the glaze and cook for about 3 minutes.

WHAT TYPE OF CARROTS TO USE

This recipe uses baby carrots that are already peeled and often sold by the pound. Regular carrots could be used as a substitute instead of baby carrots. If using regular carrots, wash, peel, and cut them into 1 inch size pieces. Cook times may need to be adjusted to be sure the carrots do not cook too fast and become too soft.

VARIATION OPTIONS

Margarine can be used in place butter with similar results.

Want some extra spice? Try using pumpkin pie spice instead of cinnamon for enhanced seasonal flavors.

These sweet carrots taste really good with a cup of raisins. Just add them after you have drained the carrots and are making the glaze.

Ingredients
  

  • 5 cups water
  • 1 lb baby carrots
  • 2 tbsp butter
  • 1/3 cup brown sugar
  • 1 tbsp honey
  • 1/4 tsp ground cinnamon
  • 1/8 tsp salt

Instructions
 

  • Boil water in a medium sauce pan. Add carrots and reduce temperature to medium-high and continue to cook for 5 minutes or until carrots have started to soften but still have a bit of a crunch to them. Drain.
  • Return carrots to the pan and add butter, brown sugar, honey, cinnamon, and salt. Reduce heat to medium-low and cook for an additiuoal 5-7 minutes or until sauce has thickened to a glaze and carrots are soft with a slight crunch.
  • For a thicker glaze, add 1-2 tsp of cornstarch to sauce.
